Auntie Beryl’s Mediterranean Salad
A firm favourite with everyone!
2oz brown sugar
5 tbps currants
1 clove of garlic
salt and pepper
simmer the above in a pan with 1/4pt water for five minutes
1lb aubergine
4 fl oz olive oil
8oz of onions finely sliced
2-3 lemons and 4 peppers finely sliced
sprinkle the aubergines with salt and leave for 30 minutes, then wipe and arrnage all of the above in layers, pour the warm liquid and olive oil and bake tightly covered for 1 hour at 150 degrees or gas mark 2, allow to cool.
Can be made the day before.
