RED WINTER SLAW

Couldn’t be easier and so tasty – this recipe is another of my all-week fridge staples in the winter when lettuce just feels too cold!

2 carrots grated
1 small red onion sliced
1 small red cabbage finely sliced
1 stick celery finely sliced

dressing:
2 tbsp dijon mustard
half a jar of egg free mayonnaise (or a 1/2 cup of olive oil)
2tbsp cider vinegar
Juice of one lemon
salt and pepper

combine the chopped ingredients well, then whisk together the dressing, our it over and top with half a cup of pumpkin seeds and any other seeds that take your fancy.
