EASY TIGER ROLLS

Tiger topping is a great way to add interest to your bread, this version is a simplified and quick version of the true ‘Dutch Crunch’ bread.

INGREDIENTS

7g sugar

4g yeast (doves farm is very good)

50g warm water

50g rice flour/ground rice

7g sunflower oil

7g TOASTED sesame oil

2g salt

Mix ingredients and when your bread or rolls are risen and ready to go into the oven you just divide onto the top of the rolls, or spoon over loaf and spread quite thickly over the tops. This can be made while you are waiting for your bread to prove, then left to stand till needed.

550gms Strong bread flour (Shipton Mill is my favorite)

10gms dried yeast

10gms sea salt

350gms/mls warm water

Mix it all either by hand or in the food mixer/Kenwood for 10 mins then rest under a tea towel in a warm place for an hour or so. Shape into 8 balls, place on your floured or oiled baking tray, cover with a teatowel. Then leave to rise for 15/30 mins in a warm place. Apply tiger topping if desired (recipe above) then place in preheated oven 220 degrees centigrade (immediately turn down to 200 degrees when you put them in). Bake about 20-25 minutes or so till their underbellies are hollow sounding when tapped.
