My Nans Pear Chutney

3lbs Pears cored peeled and sliced (firm is fine, but not soft)
1lb onions peeled and chopped
1lb green tomatoes thinly sliced
1/2 lb stoned raisins (chopped)
1/2lb celery chopped

1 1/2 lbs Demarara Sugar
1/4tsp cayenne pepper
1/4tsp ground Ginger
1/2oz salt
5 peppercorns in a muslin bag
2pts good quality pickling grade malt vinegar (6% acidity)

Put all fruit and veg in a pan (with no liquid added), simmer gently till tender

Add everything else and simmer till thick with no excess liquid remaining, remove peppercorns and then pot and seal into warmed clean sterilised jars
