IRISH TEA BRACK – VEGAN

You wont believe this cake is so quick to make, tastes so good and has no dairy, eggs, oil or butter or even sugar added, just fruit, flour and spice. Fabulous with butter, on its own or as toast for breakfast or after school treat.

INGREDIENTS – makes two loaf sized cakes

600ml Earl Grey Tea (one tea bag and 600ml hot water)

700g of mixed dried fruit (I used 200g mixed peel, 300g sultanas & 200g cranberries but use what you have)

2 cups of apple sauce (two large apples peeled, chopped heated)

450g self raising flour (or plain flour and 4tsp baking powder)

2 teaspoons mixed spice (or use a mixture of cinnamon, nutmeg, ginger etc if you don’t have any)

Set oven to 170c

METHOD

Soak the dried fruit in the tea overnight or at least a few hours.

Peel and chop your apples and pop in a pan, bring to the boil with a splash of water, cover pan and leave to cool, you may prefer to cook a little longer till you have apple sauce, but I quite like the apple to stay in chunks. I always make more and freeze some for next time. Alternatively use two mashed bananas – good if you have some turning brown and no time to do the apples!

Mix the fruit, flour, spice and apple sauce, pour into two greased or lined loaf tins, cook at 170c for an hour. Cool on a wire rack.

Enjoy with thick cold (vegan) butter or on its own. The second cake will be for tomorrow 🙂 or you can freeze it for another day !
