GOOSEBERRY & ELDERFLOWER JAM

If you dont have time to make your jam, gooseberries freeze well and you can make it when your ready, also makes a lovely gooseberry fool or bakewell tart if you have jars to finish up before the next crop is ready.

1kg Gooseberries
1kg Granulated Sugar
150ml water to boil
Juice of 1/2 lemon
4tbsps Elderflower Cordial

Wash, top and tail the Gooseberries simmer 10 mins with the water, then dissolve sugar gently and add Elderflower Cordial and Lemon juice (both will help you get a good ‘set’).  Boil hard for 10 mins and test for a set.

Rest for 1/2hr (stops fruit floating) and pot into sterilised jars, cover and seal tightly, store in a cool dark place as long as you can manage to resist (that could only be the next morning as you dream of hot buttered toast with lovely pink Gooseberry Jam…)
