Given to me by my friend Vanessa, but adapted over time, a handy dish, always popular and enjoyed just as well as a side or main dish.

1 Cauliflower & 1 Head brocoli cut into florets cooked till just tender.

250gms brown basmati rice (I like to add a handful of wild rice too)

marigold stock to cook rice in

Ground & flaked almonds

1 carton Soya Cream

Cook the rice in the stock till just tender, drain and put into a flat oven proof dish. Arrange the cooked cauli and brocoli on top, drizzle soya cream all over, then add a good handful of ground almonds and a sprinkle of flaked almonds, plus a good grind of salt and pepper.

Grill for a few minutes to brown the top slightly and serve.
